Saab heads are not particularly warp-happy, even with lots of miles, unless they've been overheated.
How long did you run the car after your latest surgery? Are you sure you gave it enough time to burn off residues from the work you did?
Dumb question, but I'm sure you replaced the head gasket with a new one, and used new head bolts? Made sure you had the head surfaced before reinstalling?
If you didn't resurface, that may be your only problem.
Otherwise, if your head's really shot, I'd side with the engine replacement -- ALTHOUGH -- that year and model of 9000 might be attainable for similar dollars to the cost of the work you'd be doing otherwise.
