I've been driving around for a couple of years with no AC belt, having suffered the same fate. No problems. That's the advantage of the earlier cars (like you '88) with a separate AC belt. Newer cars have a single serpentine belt, and a failed AC compressor MUST be fixed in order to use the car.
There is an A/C fuse you can pull. This will prevent the system from wasting electrical power pulling in the AC clutch. I never bother with hitting ECON, as I don't believe the ACC can get much more confused, and I haven't seen a downside.
The bad news is that I doubt the problem is a seized A/C compressor bearing. The problem is probably a seized A/C compressor - you'll need a new (or rebuilt) compressor to get your A/C back.
