You didn't do the critical thing on the rear calipers. You need to back off the emergency brake via the set screw. You need to do that before re-installing the caliper and NOT force the piston back with a c-clamp. Once you've fitted the caliper back in place, you then fiddle with the set screw to get everything set back correctly.
Did you back off the set screw? Sounds like you didn't which is why you couldn't compress the piston with the clamp and why you had to shave the pads.
Do a search on this procedure on this BB, and you'll find the detailed instructions.
My only fear is that you MAY have damaged the rear calipers by forcing them to compress with the clamp.
