My opinion is to go with stock rubber on both. One stock and one poly will transmit more vibration than two stock rubber.
The tough question is if it is 'too much' vibration. That varies from engine to engine, and the owner's threshold of 'too much'. You probably won't know until you install it.
Since install of the poly isn't that hard, you could always try it, and if it is too much vibration, later swap it out for stock rubber. You'll be out the cost of the poly bushing and the extra work. It depends on where you head is.
Personally, I prefer as little vibration as possible, and my co-driver is the same way. So I spend the extra effort up front, and replace both with stock rubber. But that's me. I've use the tool to remove/insert the engine-side bushing in-car in the past. It works pretty good removing the old bushing, and I've had mixed results installing new bushings. Mixted results means sometimes it's been a piece of cake, and sometimes it has become a living, week-long nightmare. From now on, the next time I want to do the engine side bushing, I will remove the bracket from the engine, and have the old bushing pressed out/new one pressed in at a shop. Removing the bracket requires moving the alternator out of the way (and taking the belt off the alternator). But I've found that way better than wrestling with a bushing that doesn't go in straight.
