The coolant temperature has minimal impact on combustion chamber temperatures. Don't confuse hot running in the combustion chamber with high coolant temps. They're related, but only a little. If you think the plugs look like you're running hot, go for a cooler plug. That's how it works - you use a cooler plug to 'cool off' the combustion chamber. So if you're running NGK BCPR6ES, try going to the 7. The other reason for the plug to look hot is if you're running lean. This will also cause the coolant temp to be hotter. It could be a bad fuel pressure regulator, clogging/clogged fuel filter, etc.
If you want to drop the COOLANT temperatures, going to an 82C thermostat is a good start. Saab sells them. But that's only half the story - you should also get an 82C fan thermoswitch. Otherwise at idle or at slower speeds when you don't have enough air going over the radiator, the engine temp will be as high as the radiator - and that's 89C with the stock thermoswitch. Check the archives - some folks have used a VW switch, and Townsend Imports also sells an 82 C two-speed fan switch.
