If you can, when the AC decides not to work, pull to the side and open the hood. The outer portion of the AC pulley spins all the time, but the inner portion only spins when the AC clutch pulls in. The AC clutch cycles on and off.
If while the engine is running and AC ON (not in ECON), you hear a click and you see the inner portion of the AC clutch trying to turn, then go with petert's fix. If, however, you don't see the inside portion of the pulley turn, after watching it for about 2 minutes, then the first thing I'd do is go after the AC relay. It is in the relay box in the engine compartment. The internal contacts gum up. Get some Contact cleaner from Radio Shack or an autoparts store. Engine off, pull the relay and spray the socket. It'll dry while you do the rest of the work. Pop the cover off the relay and clean the internal contacts with some fine sandpaper, and then give them a squirt of cleaner and let it dry. Make sure you don't leave bits of sandpaper between the contacts.
This relay trick quite often fixes the problem where the AC quits after the car has warmed up, and stays quit until the engine cools off.
