It is always bubbles coming up out of the expansion tank when the engine is running.
If you don't loose a drop of coolant, you don't have a leak, as simple as that.
The cooling system is suppose to work under pressure, that's why the pressure cap is set on about 15-20 Psi before it opens up.
The easiest tests would be to buy one of these combustion gas leak through tester at an auto store. It is a plastic tube that you fill with a blue liquid, place it in the expansion tank opening and start the car from cold. If the liquid turns yellow, you have exhaust gasses present. If not, everything is fine.
I wouldn't want to use the Saab all metal gasket even if I could. I'm not sure it lines up properly (never tried). It seems to have problems keeping tight at the rear head bolt where the oil passage up to head is.
You would also probably raise the compression too much with that gasket since it is thinner.
