This is the code that will always come up when you have experienced limp-home mode. It is NOT a pedal pot code, but a Trionic ECU code that says "why, I do believe the throttle position signal is out of range!" Which is correct, because the throttle's electronic functions will have been overridden by the limp home function, causing it to send readings that don't make sense to the ECU.
If you're seeing a pedal pot code specifically, this would be the cause of the limp-home mode, and you'd then have expected to see the P0120 code PLUS the pedal pot code. I suspect your indy is misinterpreting P0120 to refer to the pedal, or accidentally swapped terms while you were discussing the event.
I've had one car that had occasional freakish pedal pot/limp home issues that cropped up once in a blue moon, then went away spontaneously never to be seen again -- or at least not for several months. Based on that experience, I'd say drive on and see what the car does.
After that, I believe O2 sensor codes are usually specific, rather than a more generic "air-fuel mixture" code which could be the result of air leaks and such, or maybe simply due to the car's being in limp-home mode. Or unrelated altogether and just in the computer's memory from some other one-time deal.
"Adaptation" code means that the Trionic brain had or is having some issue with figuring out just how heavy your right foot is and how much gas to give the car when you ask for it. Basically, how much turbo boost is allowed based on your driving style. Or something like that. Again, I imagine this could be a result of limp-home mode confusing all the little trained monkeys that run your ECU.
Now that the codes are cleared, just drive the car for awhile and see if any codes return. That will tell you more.
As long as you passed emissions (which you did with room to spare, right?) then it's nearly certain your O2 sensor is fine.
