That kind of bouncing does indicate a bad connection. It could be the ground, or the sensor.
A low reading, (when not bouncing) would indicate a stuck open thermostat. You'd also notice a lack of heat from the heater. Since you've only had the car a few months, there could be a few issues going on. In terms of the gauge going high when sitting in traffic - does the radiator cooling fan come on? When sitting at idle, there is no airflow over the radiator, and even a car with no thermostat will get hot. The fan thermoswitch in the radiator should kick on the cooling fan. So make sure that is working.
Poor thermal control of the engine can mess up the idle to some extent. If the engine control thinks the engine is cold, it adds fuel. But you could also have yet another issue going on, including a bad Fuel Pressure Regulator (FPR), vacuum leak, etc.
I'd replace the thermostat, check the operation of the radiator fan, (make sure it comes on) and fix the temp sensor. If you have a flaky temperature reading, it's hard to know if the engine really is running hot/cold. Then see where you are. A bad idle is annoying, but overheating can destroy the engine.
