Not much correlation between the thermostat and the AC.
The A/C clutch pulling in is a very good sign. A few questions-
The AC should cycle on and off, the clutch pull in and release every 30 or 40 seconds. Does it do it more than once or does it keep cycling (as it should)? As it cycles, touch the lines from the compressor where they turn to metal. The fat one should get noticeably cold; the thin one may feel a little warm.
If the clutch is cycling (the center of the pulley spins with the outside) only once or twice, I'd suspect a bad AC relay. If it does it regularly for 2-3 minutes, and the lines don't get cold (and hot), the compressor may be bad.
If it cycles regularly, and the lines get hot (and cold), move to the windshield. I suspect the drains on the AC condensor may have been clogged. All that water from the rain had nowhere to go.
Remove the horizontal panel at the base of the windshield, just aft of the false firewall. It takes a few screws (you already did this to inspect the arm). On the passenger side (LHD), you'll see a long rectangular cover - pop it open and pull out the filter. Does the condenser feel cold? If it's clogged with leaves, remove them. If the general area is clogged with leaves, remove them. After the engine cools a bit, look down between the back of the engine and the firewall. About mid car and half-way down, you'll see a little pipe coming out with a cover. Reach down (hence the cold engine) and make sure it opens. That's a drain. You might even want to snake it with a screwdriver, in case it has clogged up.
I assume the cabin fan is blowing, and the speed can be controlled.
