Vacuum leaks don't cause other hoses to blow off. Boost can, though.
The short hose to the 'square sensor' - that's the MAP (Manifold Absolute Pressure) sensor. The ECU figures out how much air the engine is taking in using that plus the intake air temp sensor value and the rpms. You need the MAP (and hose) for the car to run right. There's a specific hose for that - I think its just less likely to balloon than standard vacuum hose.
The valve cover grommet you should be able to get just about anywhere, but eeuro has them for sure. If that leaks, it just vents crankcase pressure to the atmosphere, although it could allow unfiltered air into the intake under vacuum.
Its important that the check valve in the skinnier line from the fitting to the intake is there, and prevents flow except under vacuum, otherwise you can blow out the valve cover gasket under boost.
Hopefully you're not overboosting - you might want to check your BPV valve. Search here for lots of details on that.
