I'm no expert in the chemistry of oil viscosity, but this is basically how it goes:
The lower the number, the thinner the oil. Think of the number as the amount of time it takes to pour into your crankcase.
Viscosity is the amount of time it takes to pour a certain amount of a substance. In this case oil (SAE 5, 10, 15, 20, 30, 40 etc)
SAE 40 oil is "thicker" than SAE 30, and you will notice it takes longer to pour in a quart of SAE 40 than 30 into your crankcase.
As stated the multi-viscosity oil means that: the first number indicates the viscosity and the second indicates the protection value.
ex: SAE 10W-30 oil pours like a 10 weight oil but protects like a 30 weight oil.
