Here are some things that come immediately to mind:
1) add fuel storage fluid to fuel tank (follow instructions and add premixed with fresh gas) and drive it to make sure all the fuel in the car is protected with anti-gumming agent. Top off the gas tank to minimize vapor losses over the storage period.
2) remove spark plugs and spray fogging oil into cylinders. Turn engine over manually to lubricate rings and cylinder walls. Replace spark plugs.
3) jack up car on jack stands to preserve tires. Otherwise they will develop flat spots.
4) remove battery or at least disconnect. Battery will drain completely over a period of a year if not periodically charged.
When you return and use the car for the first time, change the oil first and replace spark plugs with new ones.
