Saab engines like to clatter. That's what they do. That noise can come from a lot of things, like a sticky or slow hydraulic valve follower, a slightly worn upper chain guide, or stuff not even associated with the valve train, like a worn fuel damper or just plain noisy fuel injectors.
NEVER NEVER NEVER replace a chain just because the engine is a little noisy. As I mentioned above, if you're worried, there is a procedure in the Haynes manual for inspecting the timing chain. It takes about 45 minutes and you need a new valve cover gasket, but I'll bet your old valve cover gasket is already leaking some oil anyway. Any decent mechanic should be able to do this for under $100. Make that $100 investment before you shell out $$$$$$ for unnecessary work.
And when it comes to decent mechanics, I think that group excludes the one you've spoken to.
