Depending on where the bolt is, you might be able to get away with just leaving it out, and tightening the rest of the bolts to the correct torque. Is the bolt one of the two long bolts at the bottom left, or one of the short ones?
If it is a short bolt, you can get a Helicoil thread insert and use that. There will have to be sufficient metal around the bolt hole to stand being drilled out (threads and all) and have the thread insert threaded in. If you could get the screw extractor out first that would help. I don't think a new oil pump is the answer, because I think your bolts thread into the block.
One thing to keep in mind on these bolts are that they thread into blind holes. Before you put a bolt in, you have clean any oil out of the bolt hole, otherwise the bolt can be difficult to tighten. (The oil has nowhere to go.) If you go the Helicoil route, don't get any metal chips into oil pump. A scratch on the wall of the pump will keep it from developing sufficient pressure.
I would seriously consider leaving the bolt out, and seeing if it still leaked. Good luck, and keep us posted.
