The piston inside the caliper is just that - a piston inside a cylinder. The brake fluid enters the backside of the cylinder under pressure and pushes the piston outwards. The danger of cranking on the piston is that you can get it wedged in the bore of the cylinder and score the walls.
One possible explanation for your problem is that you have corrosion inside there. I had this same problem on my front calipers, which prevented me from retracting the piston even enough to get the pads out from around the worn down path on the rotor. So I removed the caliper and rotor as one piece and replaced them both. I was putting in new stainless brake lines, so unscrewing the old brake line was not a problem, but it might be for you if you are trying to keep the old brake line and have to remove both the caliper and rotor as one piece.
