The AMM is the Air Mass Meter, which measures the airflow and decides how much fuel to inject. It could be a bad remanufactured AMM - heck, any part can be bad right out of the box. I would contact whomever sold it and see what their return/swap policy is.
The real key is that O2 sensor pegged lean. It could be a bad AMM. It could be a bad fuel pressure regulator. I know the feeling - you press the gas pedal, and it doesn't feel like the engine is paying attention.
I stick by the AMM, as a guess. The Engine Control uses it to control fuel flow. I'll bet it's just giving out a signal for little or no air flow, no matter how much you open the throttle. The Engine Control does have a back-up mode, though - if the revs get high enough it'll add more fuel, even if the AMM says you're at idle. It believes revs more than AMM.
Get yourself a good digital volt meter. CAREFULLY peel back the rubber boot on the back of the AMM connector, and get the positive lead into pin 3. Put the negative lead to ground, and set the meter to VOLTS. The other place to get this signal is on pin 7 of the Engine Control Computer (passenger side foot well). Start the car, and at idle you should see around 1.2 to 1.5 volts. Rev the engine, and the voltage should go up to 3 or 4 volts. It should go up to 5 volts under load. If the voltage doesn't change, or doesn't change much when you rev it, the AMM is probably bad.
