Actually, bending the link is the officially-approved method of adjusting the original FoMoCo linkage, so if your pre-Weber carb was a FoMoCo that might be your first approach. If you want something more elegant, or more adjustable, you can get a link with a ball stud and threaded adjuster at each end. The Weber carb I had (NOS kit made especially for Saab V4) came with this adjuster, but I believe you can still get it separately as a Weber accessory item.
One place that has a lot of Weber stuff is Performance Parts Warehouse of Hauppage, N.J.; their website is what comes up if you type http://www.webercarburetors.com in a browser (lots of people think this is the Weber factory site, but it isn't.) If you were buying a complete carb I'd suggest you deal with a marque specialist, but PPW is good for "nuisance" parts such as this adjustable link rod or individual jets etc.
BTW, if your linkage isn't allowing the throttle arm to hit the idle stop screw (as you say) I'd get this resolved and see if it fixes the problem before I started tinkering with the jets. You need to get the linkage set so that you have a full range of adjustment on the idle speed screw, i.e. by backing out the screw you should be able to slow down the idle to the point that the engine won't run at all... then you can bring it back up to where it's supposed to be (about 900 rpm depending on your engine.)
