I think in your case it is not the purge valve. From what you describe I would indeed look at the O2 sensors and also your vacuum hoses. The O2 sensors going bad will cause stumbling in the idle but I am not sure if they would induce a spike to 2K. Thus, I am thinking you have a misconnected or degraded vacuum hose that could induce the spike. Your note of running air/heat also hints of trouble here. The HVAC demands vacuum so that is possibly a good clue.

You noted you've installed new hoses, can you confirm the connections are correct and that the hoses are sealed properly?

For the O2 sensors, they rely on resistance to function properly. Noting you've replaced the exhaust it might be worth a check to ensure the sensors are in good working order. Check all of the connectors, clean the threads of the sensors (to ensure good contact) and if you have a Voltmeter, check the resistance. The last item of consideration I could think of is fuel. The T5/T7 ecu's are very responsive in trying to compensate for a lack of proper fuel flow. I know when I had an injector clog everything went a bit whacko. Spiking idle, sputtering and after a while a CEL took me to the dealer for some time on the TECHII. #4 injector was sputtering. A $17 can of BG44K injector cleaner later, all is well and smooth. Also, have you checked the fuel filter?

Have you had the car hooked up to a TECHII for a peek? It might be a good one hour of labor to help track down the troubles more easily.
