Good question. Theoretically, if the engineers at Saab didn't screw up, then no, I don't see why the car would make more power. Also, I don't know if Trionic adapts to knocking limits, or whether it just retards the timing on an as-needed basis.
I've been running 87 octane since November, and I haven't noticed any knocking (although that doesn't necessarily mean there hasn't been any). Suppose I could experiment by running a tank of 91 and pushing it hard, then switching back to 87, pushing hard there as well, and seeing if there's any knocking at first. Problem is that it might be hard to sense the knocking if the Trionic notices it and retards timing first.
I would suspect, actually, that Trionic doesn't adapt to knock protection; this is why Saab warns against using 85 octane in areas--like the Rocky Mountains--where it is available, or using 87 or 89 in a HOT engine. This would mean that if you're not getting knocking with 87, you probably won't get better performance with 89.
Still, others have reported feeling better performance with higher octane fuel...and since I don't know all the inner secrets of Trionic, they could be right. And regardless of whether the car actually does perform better, if you convince yourself it is performing better, and spending the extra $2 per tank makes you happier, then you should do it :)
But to go back to the maintenance issue, I personally have enough faith in Saab engineering to say that following their minimum octane recommendations should be fine.
