I agree with everything Drewser wrote. Here are a few additional thoughts:
1) Into the yellow is fine...it's hard not to get that when accelerating. Don't floor it. You should be able to keep it in the bottom half of the yellow. If you don't accelerate any harder than you could in your Mazda, you're not really pushing the Saab, and it should be fine.
2) As you get used to the car, you'll be able to let out in first earlier. As I'm sure you know, the less time you spend with your left foot on the clutch pedal, the longer the clutch will last. Which gear you drive in will always be a matter of personal taste, and it is also something you'll grow into over time. Remember that you're at full torque at 2100 rpm, but it drops off steeply below that. So if I'm on a windy road, speeding up/slowing down, etc, I like to make sure I stay above 2100. Otherwise, I conserve fuel by shifting up when it shines that orange light at me.
3) You've got an '00 with a T7 ECU :) My '99 has a different recommendation in the manual. If I were you, I'd run 90 or higher to get the most fun out of the engine.
4) As Drewser said, only one side can be folded independently of the crossbar. If it doesn't seem to make sense, I'm sure the dealer can demonstrate...and if it's broken, he'll realize it and not call you crazy.
5) I drove through blizzards on my all-seasons last winter, and it was definitely a much better experience than my old Civic with snows. Still, I plan to get snows for this winter, and then ditch my all-seasons for summer tires in the spring. I think in upstate NY you should have snows no matter what kind of car you drive, or how many of its wheels are driven.
6) Manual Boost Controller. It's an aftermarket upgrade. You have a T7 ECU, so it won't give you that much improvement in performance. Dean has pointed out that you can use it to get the turbo to spool up a little faster, though.
