I see you found the root cause of your problem.
The temp gauges of todays cars are a little bit funky in the way that they are controlled by a computer. You can set a certain min/max value in that computer so that the temp needle is staying in the middle of gauge even though the actual coolant temp is fluctuating a bit.
In your case, since the coolant was rushing out, it left the temp sending probe dry and that will also make the temp gauge show inaccurate values.
The temp probe NEEDS to be submerged in coolant to read proper values.
If you want to and can bring the car to my shop, I can sure take a look at it and see what the car needs.
