Sounds like you might have a big air bubble somewhere in the system but that should usually find its way to the top when sitting over night.
Where is the level in the morning when cold?
Is the low speed working on your cooling fan. Maybe the low speed have died and you are only hearing the high speed fan kick in and that would bring the pressure up in system since the high speed is only used as an emergency.
So did you replace the thermostat or put the old one back in?
