Holiday Horror! Overheating issue

1999 Saab 9-3 166k miles....driving this morning from New Orleans to Charleston, WV.
About 300 miles in, temp gauge spikes...killed motor and temp immediately went down. This said, I let the car sit for about 20 minutes and cool off...idles just fine with temp in normal operating range.
Got back up to highway speeds and temp started to spike again...gauge maxed out for a few seconds and would return back to 'acceptable' range. So, the remainder of my 1000 mile trip was done with heater on full blast and windows rolled down.
I'm now in Charleston preparing for the worst when the car goes to the shop for diagnosis. My first thought is stuck thermostat...and without any fluid loss between overheats, I'm fairly confident that I don't have a weeping water pump, faulty hoses, or leaking rediator. Also, my hooter valve is due for replacement...would this have any bearing on the problem?
Any and all help is appreciated! I'll check back before I head out in the morning! Happy holidays all!
