I've done several clutch jobs. Drop the front exhaust; then the engine support frame; use an engine support to hold up the engine; remove the driver's side axle (loosen wheel nut before jacking up car); and drain & drop the transmission. Be sure to resurface the flywheel, and replace the rear engine seal (used a small metal screw into the metal part of the seal to help pry out the old seal). There are some good online instructions. Taking out the engine would be a lot of extra work (would be easier to do water pump while doing clutch even with the engine in the car). I'm no expert so get some better ideas, but these are some ideas to get the conversation started.
