I can answer a couple of your questions. I have a 1998 900SEt with the Dunlop SP Sport 5000 in 205/55-16. The tires fit fine and give a good ride. They have good dry grip, great wet grip, and are even pretty good in light snow. No fit problems at all.
I also have the SAS rear sway bar. It is probably the most significant, and cost effective, change to my 900SET that I have made. The SAS rear sway bar really changes the handling by getting rid of most of the body roll. The rear end feels much more connected to the car, not like it is just trailering along. Ride quality is sacrificed slightly as the larger rear sway bar does allow more road vibration to be coupled through the rear twist beam axle. I found that reducing tire pressure a bit from 38 PSI front/36 PSI rear to 35 PSI all-around helped moderate the added road vibration.
