OT volunteer work... (longish)

I offered to donate my professional services to a civic organization for a project they are doing. In this case, I'm doing prepress, design, typesetting, and print consulting for a Christmas book that our city arts council is planning. Well...these guys on the arts council are a bunch of clowns. Missing deadlines, whining about things I ask for, changing their minds every other month, and being incredibly nervy about everything. I get this constant sense that they have their own idea of how book production works and they are mostly ignoring me (I do this for a living at a real publisher for about fifty books a year, so I do know what I'm talking about).
I've got nothing at stake here...it's not my project, and I'm not being paid. They already missed out in 2004 thanks to ignoring my schedule and now it's looking like we might not make it for 2005 either. If you were me, how much more patience would you have with these people? I want to do a great book for them and I want to have the opportunity to help again in the future. I don't want to burn this bridge...yet.
But I just can't understand why they would engage a professional to help them if they had no intention of actually following my suggestions. I get questions like, "Why can't you just do a design now, even though we have only delivered one quarter of all the copy, one third of all the photographs, and we still haven't answered your questions about whether all the photos will have captions?" Yikes! And so it goes...nowhere. I can't really get angry at them...I'm not their boss, this isn't my project. But I still feel frustrated with the whole thing.
I just wanted to do something fun and nice for the city. Ha!
