It depends on the hotel chain. I'm a frequent (and by that I mean 150-250 nights per year) business traveler. Historically, some chains have been storing your personal information on the cards. There was a major media news investigation about this a few years ago. Most chains have stopped encoding your data on the cards, but I asked each and every time I checked in for the longest time...I got lazy and don't ask any longer. I know people who take the cards with them and refuse to give them back to the hotel.
I have personally seen or been victim of two credit card # thefts with hotel chains. The chain (same chain both times and someone with the name of a European city is a family member of the founder) never did anything about it despite me calling and leaving messages in a friendly manner (seriously) with their legal department.
It's never a bad idea to ask when you check in. Hopefully none are doing this any longer but it is indeed a fact that some used to. I've had hotel managers admit that to me.
