You're right that DOT5 isn't hydroscopic, but my understanding is that this is a mixed blessing. When DOT3/4 fluid absorbs water the fluid mixture has a very low water concentration which won’t corrode metal in the short term. At a certainly point the fluid should still be replaced.

DOT5 will allow water to pool in the system instead of being absorbed, so the same small amount of water will be in a greater concentration and can actually be worse for the metal parts. DOT5 is popular among racers due to its very high boiling point, but they also change their fluid very frequently. DOT5 has its advantages, but I personally wouldn’t run it in a street-only car based on my understanding of the fluid
