DOT3 & DOT4 are poly-glycol fluids, water is completely soluable in them. Water lowers the boiling point and also (unfortunately) makes them corrosive.
DOT5 is silicone fluid, and water is insoluable in that. So instead of lowering the boiling point from 400F to 350F, the water is located in one place & THAT boiling point is all the way down to 212F. If the water happens to be in the caliper, that's not good.
Apparently they invented the DOT 5.1 category for poly-glycol fluid that has high boiling points that would meet the DOT5 spec for boiling point, but it isn't silicone. I've heard that SynPower fluid is DOT 5.1 but it's labeled as "exceeding" DOT4 because the DOT4 rules don't forbid extra-high boiling points.
