Just finished a similar project, similar house. I think our costs came in similar for the below-work, we did some work, like paint, buy appliances, ourself, so it was not included in price. Get a recommendation from someone who has done the same thing, never hire a contractor cold, like from the paper; get a detailed estimate, from each contractor, to compare (e.g. $xxx for 14 custom painted maple cabinet doors). The problem with the older house, none of the dimensions are going to match, like my house, everything back then was non-standard, so the Home Depot stuff will never fit right. I would not go with laminate cover, all you are doing is covering up the junk. New custom doors, and a lot of paint in the cabinet, can do wonders. Plus, I painted everything but the doors myself, took a few days, but saved $1500

We did this:

new sink, faucet and about 13 feet of laminate counter (looks like granite - good stuff);
strip old "rock" face from walls, new plaster
new custom doors - 13 w/ hardware (cabinets were solid), and we let the cabinetmaker paint w/ sprayer to look nice.
three custom drawers incl. one, just off the floor in pantry, that my wife described and then he built.
installed microwave / vent
install new gas stove incl. gas line
strip cheap paneling and install drywall, marble tile and molding in front entrance and rehang front door (about 6x6)
