you can use a vacumn switch (the one used on turbo cars to kill the APC when cruise control is activated works well and is adjustable), vacumn closes this switch. This can be wired up to provide enrichment only at low vacumn conditions (WOT).
I like to use two microswitchs (wired in parallel), these switches are thin and can be mounted right next to each other with longer screws to the mounting bracket. You have to widen the cam part of the throttle where the cable connects, so that both switches activate at the same time.
I do not remember the exact setup, since I haven't had a N/A car on the road for over 10 years (this setup went with the car) and I just finished turbocharging the only N/A motor I own. Just remember that you need to read either the correct temp sensor output or the modified one that richens the mixture and that you only want the richer mixture when certain conditions are met (low vacumn, large throttle opening, and maybe even RPM would be nice). Also, the switch over from one circuit to the other has to happen at exactly the same time or you will get a hiccup.
