Well, i dont know any more about the 2.1 & 2.3's than I have read on this board but this is my experience building a 2.0 motor. I can compare my old motor -stocker pushing 20psi and my new modified one. The new motor is a stock 85' block/pistons etc.. all new bearings seals etc. The changes between the two engines were that I ported (gasket matched) the intake and exhaust manifolds and the head as well as getting rid of the big obstruction in the ehxaust manifold (which I dont think you have)i gota slef tweaked APC MSD6BTM MSD wires MSD coil (had all that on old engine).
So the differences- mildly ported head is very eager to rev, faster turbo spoolup and more power at high revs.this is just at 15psi since I am scared to crank up the boost too soon. IT is at that pressure faster than my old engine. A ported head from SD would be an even bigger improvement as I am sure they enlarge the ports much bigger than I did and with more skill. Call them up and ask them which head would flow more.
As for the questions
1) Idunno
2)Faster top end- better spool up (porting kit cost 40$ plus 30$ die grind)
3)I have heard 2.1 intake is best
4)umm do your timing chain perhaps MSD igintion?
5)New seals and guides + 3 angle grind = $150-200
6)I have heard $500-800 for head gasket jobs which is what that would be
Hope I got everything.
