Open up your APC box and try and find a single bit o' memory... just isn't there. It's all a bunch of analog circuitry that "listens" and responds to the pressure transducer, the RPM signal, and the knock sensor. That's all it does.
The reason it can take several minutes to get back to full boost is because knock unfortunately doesn't just go away. Heat in the engine causes knock, and once knock sets in things get even hotter even more quickly. Cooling down parts after any amount of knock will take some time, and during that time the engine will be prone to it. As a result, the APC will seemingly keep boost back because it keeps detecting more knock...
As for LH boxes, they are as stupid as modern electronic fuel injection gets. They listen to an RPM signal, an airflow/mass signal, and a throttle position sensor and run it up a chart to figure out how much fuel to dump. They don't know any more than that, and don't keep track of what happened once its gone - they simply don't have the logic or the onboard storage to do so. The only memory in LH, and only in LH 2.4 and later, is the ability to store fault codes once they've occured, and it can only store *3* codes - which equates to 15 characters worth of information. That's it. Couldn't store a lot of driving style info in 15 characters, I'm afraid... well, maybe mine: "Lead Foot" heh.
