If it ran fine, then didn't, it could simply be heat related.... as the engine cooled, parts (head, block, gasket) may have shrank back down pulling themselves apart. I had a not-nearly-as-catastrophic failure with my '80 900T - on a drive back from Oregon everything seemed perfect, but the next time I went to start it the idle was quite unhappy and coolant was literally pouring out of the #4 cylinder area... once the engine had cooled off the gasket truly failed. Prior, expansion due to heat probably kept everything together.
You can try a compression test, but it sounds to me as if the head is coming off one way or another - either for a simple gasket replacement or for something a little more invasive.
