Please note that I know nothing about head work on OHC engines, but am somewhat familiar with it on older OHV engines. I'd recommend talking to your machine shop to see what they recommend and if they are familiar with performance work, particularly in DOHC engines. Porting, especially, can be cause much more harm than good if you don't know what you're doing.
For performance, spring for the best valve job available, at least a 3-angle, and possibly a 5-angle if your shop does it and it's not excessively more expensive. See if your shop is comfortable doing a pocket port and bowl blend (if they're even applicable to a DOHC engines), both of which are fairly simple operations, with minimal chance of damaging the engine. Beyond that I wouldn't feel comfortable having non-Saab specific shop doing the work.
I wouldn't worry about the cams unless you're planning major mods, and even then they're pretty assesible without removing the head.
