Can't speak on the injectors, but the exhaust manifold is simple...
The first-generation turbos had an external wastegate plumbed into the exhaust manifold, the second-generation turbos had a small wastegate integrated into the turbo exhaust housing. Obviously, you need to match the wastegate configuration to the turbo. Additionally, the exhaust->turbo flange *does* change sizes, and you need to match the turbo to the manifold. The later manifold is compatible with a common T3, while the earlier one (AFAIK) is not. My advice is to grab the exhaust manifold from an '81-'84 h-motor turbo. You can plumb in an external wastegate if you like, or use the integrated one. Replacement (i.e. uncracked) manifolds will be more common, and turbo selection and fitting will be easier going this route.
I'd definitely love to hear how you get on with this project, and where you find/fabricate a fuel rail!
But, out of curiosity, why not stick with the factory CIS? It's fairly flexible and easily tunable. Unless you plan on making crazy horsepower, it seems to be the neat, simple approach....
