I can't speak for everyone here, but I'm sure most will agree, we use water injection b/c it allows us to make more power, by allowing us to run more boost without detonation. As far as risks are concerned, I personally don't feel there are any serious risks involved. (With a competently designed and installed setup.) Since H2O is a normal byproduct of combustion to begin with, cylinder rust is not an issue as our setups are not continously spraying. Typical applications only spray under boost, so no water actually collects in the cylinder when the engine is off. If anything, water is beneficial in the cylinder during combustion b/c it "steam cleans" the sh*t out of the combustion chamber eliminating carbon buildup. In fact, Saab has recently started selling cars with factory water injection, though I personally don't know what models exactly.
