Hey man...I did this to mine over the summer and LOVE it. Funny, when I did it I was thinking the same exact thing as you are. I was thinking of writing to tell/ask him why it says you need 2 spacers.
I only used (and could figure out that I only needed) one spacer. The larger one, the 3"ODx2"ID. I was not able to find any tubing, so I cut it from a .75" piece of alum plate stock. First, I drilled the exterior 3" hole out with a drill press and a hole saw. Make SURE you add oil to the cutting blade. It will keep it from squeeling and also help speed the cut. I then just switched the hole saw and clamped the 3" piece on the press. Doing it in this order you will retain the center hole from the hole saw. I guess it wuld work the other way too, if you did NOT move the plate any and just switched the saws out.
