There are some plywoods with many thin laminations that are very strong. Sometimes refered to as aircraft plywood. I don't know where you would get that. There is good stuff around that is much better than roof decking. As for shelves and building box like structures, I don't understand what you are wanting to do... its all in your head. Corners need to be screwed to filler blocks to have good structural properties. External corners need to be rounded off. The carpet coated speaker boxes come to mind. Any custom audio folks near there making such for vehicles? They will be using a lot of particle board I expect. They may have suggestions for the carpet covering etc.
