I have (well, I let it lapse) an AllData subscription, which is a transcription of much of the factory docs/WIS. It goes into a lot of detail about theory of operation, graphs, voltages, sensors, cause and effect, assumptions, etc. It doesn't explain actual code or protocols (beyond some stuff about PWM). It does say things like 'DICE sends the FAN HIGH command' but I'd hardly expect to be able to type that in somewhere and have it happen...or...
CAN, (Controller Area Network) as I read more about it, is very popular in Europe. 9-5 is specifically mentioned (on outside web sites) as using it.
Basically, what the VW guys did was splice the network (+ and - lines) into an adapter to a laptop. Now, what ran on the laptop is beyond me; there are generic CAN clients for windows/unix/etc. Most work seems to be around reading data, although some claimed to have written commands to the bus (like 'close the windows').
