How detailed are you? A dealer or independent Saab shop is gonna' handle the detail with a hard copy of a service repair order for you and likely save a copy too. There's no prohibition against using an independent for routine service functions, for warranty items you'll need the dealer, but for just service, brakes, and stuff, you can do that at an indy and retain the docs without affecting your warranty rights.
If you DIY then how will you document it? And what credentials can you produce that says you're competent at it? But DIY or not, there's a whole bunch of parts on the car that don't require any service or maintenance that will be warranty, service documentation or not. And there are some warranty items that are strictly a question of documentation of maintenance like sludge.
You do avoid a layer of complication by bringing a CPO car to the dealer during the CPO period. And the happiest of all car customers only go to the dealer and don't mind the extra expense (that's why they're happy) because it is indeed the best and most convienent in many cases.
