A lot, it's not just a style change, the engine is a different one, body stiffness is much better in the newer model, and more... If you can find one of each, I'd suggest taking a ride in them both. In my experience ('04 Aero) the newer one beats the older hands down in ride feel, but the interior in the older model is a bit nicer (except for the SID when the pixels die).
Mechanically, we have a 2001 9-3 SE, I guess you could compare that to the convertible for how the engine wears. The '01 has needed more work in general than the '04, including: exhaust (fixed a leak, replaced muffler); bent wheels (3 on the '01, none on the '04, but the '04 has a summer and winter set); replaced SID once, second one dead now, too. The '04 hasn't needed much outside of regular maintenance (wiper blades, tires, oil & fluids, filters, etc.)
Other minor annoyances are common to both, like the disappearing badge on the hood, but the '01 lost it on the steering wheel, too. Some plastic things not holding up that well. The power seat button cover on the driver's side of the '01 is detaching from the seat, the OnStar antenna cover (shark fin) on both is cracked and will fall off before too long. The pinch sensor on the '04 is a pain in the butt, don't know if this existed before the SS. Just a few things I can remember off the top of my head.
