If you ONLY want to try to do that O-ring, you need to figure out where that pipe is held in place to engine.
It is a 16mm head bolt just further down that is a little bit difficult to get to all depending on your tool set and maybe one more further down.
But I would strongly suggest to replace the whole thermostat since they do go bad over time and the gurgling might be a sign it is not opening fully.
It is a complete nightmare to remove the thermostat on the V6 and more so, clean off the old gasket material so I would suggest a Saab shop for that unless you have tinkered quite a bit with cars.
There is a hidden screw for the lower radiator hose bracket that is almost impossible to see and reach and that pipe needs to be moved for the thermostat to slide out.
As a tip to others, if transmission is removed, always replace the thermostat at the same time. MUCH easier.
