Just traded in our 00' 9-5 for an 06. If you go back and drive an older 9-5 you'll love the new brakes. In the older 9-5's you couldn't get the car to not jerk when you came to a stop no matter how hard you tried, but the new brakes are a harder material, so they dont grab as quick, allowing you to stop smoothly at lights and stop signs. I had upgraded to ceramics and drilled rotors on my old 9-5 and had the same experince when I first got in then, so 06 wasn't any different. Also, you'll experience much less fade if you ever have to really get on the brakes, or if you are coming down a long steep descent.
