Had same problem with my 99 9-5. Used 50:50 water/ethylene glycol antifreeze. Took it to dealer and as expected it was a bad water pump which was replaced. You probably have a slow leak from the water pump. When the car is warm the coolant has expanded and the sensor does not give the warning message. When it cools (cold in Ohio) the level goes down and you get the message. I looked under the car and could not see any visible sign of any leaks. Your symptoms sound exactly the same as mine. Check that water pump.
P.S. This is my first SAAB and the water pump was only one of many problems with this very unreliable vehicle. Never again; this is my first and last SAAB.
