These are my favorites, in decreasing order of importance.
StonGard full kit to protect the paint. Definitely!!!! As soon as the car arrives, even before you drive it home! IMHO you should buy this if you get nothing else for the car! Unless you are leasing, then forget about it.

Snow tires and wheels - if you live in the snow belt especially. The summer tires are totally worthless in winter, and you risk sliding your new pride and joy off the first turn you come to (if it's slick out).
Winter floor mats. I use WeatherGuard, and they are ok, but the fit is not too good, so I don't recommend this brand. They do hold a bunch of water and snow and are very quick to dry. I had to trim a piece near the clutch pedal because the pedal would hang up ocassionally all the way down. Very awkward in traffic!!
Valentine 1 radar detector. You will need it!

Cargo mat. I use the Saab winter carpeted mat - it does fine and does not slide around.
Retractable cargo net. Very versatile, quick to remove, must be installed by the dealer unless you sre comfortable cutting holes in the seat backs. Works even with the seats folded down, which is cool. I use mine on long trips when the kids and wife make a lot of unanticipated purchases.
Crossbars and fairing for the roof rack. OK, that's number 6, but you need somewhere to carry bikes and stuff, or that cargo pod....which is number 7.
The Saab WIS (Workshop Information System) maintenance CD, if you care at all about doing your own work. Expensive at around $225 USD and really weird software, but it has most of the detailed info you need to work on your car.
