I think if it is "very loud" as you describe it, Saab should definitely correct the problem. Something is loose or vibrating and causing the sound as the refrigerant equalizes in the lines. It sounds to me as if the compressor reed valves are buzzing, and Saab should replace the compressor.
I have always noticed quiet swooshes and gurgles in a/c equipped cars when they are turned off - never anything objectionable.
One thing you could do before visiting the dealer is listen for the sounds using a stethoscope or long dowel rod. Place it right on the compressor if you can, right after you have someone shut off the engine. You should easily be able to pinpoint the source. Just don't hurt yourself doing this!
BTW, don't get mad, just be firm. It only raises your blood pressure and ticks off the service writer. Just insist on getting it corrected, and talk to the Saab area rep if you get no satisfaction from the dealer.
