Have you considered putting washers/spacers in, between the floor and the seat mount bracket? You can get maybe a half inch rise with the stock bolts, and more still if you substitute longer bolts.
I shim my seats up in the front, to get more rake - did that on my NG 900s as well.
I find the seats in the Aero address the pedals exactly the same as the conventional seats do. I have 4 cars, two of each style and the extra volume at the seat back is IMO not going to help her. The most important variable in terms of height and range of height involves the Ventilated seat option and with those you simply lose range at the lower end - higher seating positions are the same.
