As the the other pme says, frequently flush water between the inner fender/dogleg and the fender liner. There's often a small gap between the fender liner and the dogleg in which one can spray. Get the garden hose out often and flush in there, as well as under the rest of the fender and underside of the car. If the temps are at or above freezing, I frequently have the garden hose and spray nozzle out to wash the car.
I was pretty fanatical about that for the first 10-11 years of the car's life (sold the car in 2012, bought the same car back in 2021 from owner #2), and the doglegs continue to be clean, in spite of owner #2 not being careful about washing the car after gravel road driving in the years they had it.
Since you're starting with a clean slate and going to drive the cars in winter, I'd seriously consider having the undersides treated with Fluid Film or similar barrier product yearly. I'll be doing that to mine, as rust has started getting a foothold on parts of the car's underside (but the doglegs are still great!), and it looks like it'll be getting daily driver duty this winter (the 9-3 combi is getting taken out of service for a bunch of things).
